10. Level 2 award in HACCP (hazard analysis critical control point) for food manufacturing

This course is appropriate for all persons employed in food and food related businesses who need to have an understanding of HACCP. Holders of this qualification will have knowledge of the concept of HACCP and an understanding of and the ability to apply HACCP principles practically in food and food related businesses in order to ensure effective food safety.

Schedule: 9:30am to 5:00pm (lunch is not provided)

Exam: Multiple choice
Venue: Civic Centre, Paris Street

HACCP is a food safety management system designed to control hazards at points critical to food safety. It can be applied to any food process from preparing a sandwich to serving cooked chicken in a supermarket. It involves:

  • identifying food safety hazards
  • controlling these hazards
  • monitoring the controls
  • corrective action
  • documentation

Topics covered include:

  • introduction to food safety management
  • developing HACCP based systems
  • the principles of Codex HACCP
  • applying HACCP based systems

Successful completion of the course will enable candidates to develop knowledge and understanding of:

  • the purpose of a HACCP system
  • the features and terminology of HACCP
  • how a HACCP system is applied in the workplace


The course ends with a short multiple-choice test where candidates will need to achieve 20 correct answers from the 30 questions to receive the Royal Society for Public Health level 2 award in principles of HACCP certificate.

An oral option is available for those who require this. Please state at the time of booking whether an oral examination is required. In the event that we are unable to provide this on the course day, you may be asked to return for the examination at a later date.

All candidates must bring photographic proof of identification on the day of the course to meet the examination board's requirements. Candidates that do not bring photographic identification will not be able to take the course.  2020 course dates
